A malting barley contract typically asks for grain nitrogen somewhere in the 1.6-1.85% band depending on the end use, germination of 98% or better, moisture around 14.5%, and screenings within limits — with skinned and split grains kept low. The pattern worth holding onto: nitrogen is made in the field and germination is lost in the store. Those are the two specs that reject loads, and they fail at opposite ends of the season.
Nitrogen is made in the field
Grain nitrogen is largely set by your fertiliser programme and the season, and unlike a wheat grower chasing protein, the malting grower is usually trying to keep nitrogen down. Brewers commonly want lower grain N; distilling outlets often accept or want it a little different — hence the band rather than a single number, and hence checking your contract before setting the spreader.
The awkward part is that the lever works a season in advance. Nitrogen strategy is fixed by the time the crop is in ear, and a dry finish can concentrate grain N beyond what the programme intended. There's nothing to manage at harvest except finding out early: test by field before anything is committed to a heap or a contract.
Germination is lost in the store
Germination is the spec malting actually exists for — the maltster needs a living grain that will sprout evenly, and 98%+ is the usual bar. Barley that comes off the combine alive can quietly die in the shed, and the killer is the combination everyone gets warned about: warm and wet.
Barley stored at 16% moisture and 20°C isn't rotting, isn't heating dramatically, and looks absolutely fine from the door. It's also losing germination week by week, and nobody finds out until the maltster's lab tests it months later — at which point a malting heap has become a feed heap invisibly. The discipline is the same as any safe grain storage: get it to around 14.5% moisture and cool it, then keep cooling with the season. Temperature monitoring earns its keep here more than on any other crop, because the failure has no smell, no crust and no warning.
Dry it gently, too — malting barley is killed just as surely by an over-hot drier as by a warm heap. Keep drying air temperatures modest (check your drier's guidance for malting), because a cooked germ fails the same test.
Skinning and splitting at harvest
Maltsters also reject on physical damage: skinned grains (husk partly removed) and splits, both mostly made by the combine. A drum set fast and tight for a tough wheat sample will flay a dry barley sample. Slow the drum, open the concave, and check the tank sample when conditions change through the day — dry afternoon barley threshes far more easily than the 9 am load. It's a two-minute adjustment that protects the whole trailer.
The premium against the faff
Malting premiums over feed barley have commonly run £15-£50 a tonne, varying a lot by season and outlet. On 200 tonnes of spring barley at a £30/t premium, that's £6,000 — worthwhile, but not free money. Against it sits the full list: keeping nitrogen in the band in a season you don't control, drying gently to 14.5%, cooling and monitoring all winter, screenings and skinning risk, and the knowledge that a failed sample sells as feed at the feed price after you've carried all of that.
The honest way to judge it is per-tonne premium multiplied by your realistic pass rate, not the headline number. A farm with good storage, patience at the drier and a variety the local maltster wants will bank the premium most years. A farm with one big undivided shed and no cooling is betting £6,000 on the weather twice — once in the field, once in the store.
Retained samples and the maltster's lab
Malting is tested harder than almost anything else you'll sell, and the tests happen at the maltster's lab, not yours. Germination in particular can't be judged by eye, and disputes are common enough that the routine matters: sample properly at loading, retain a sealed sample from every load, and keep it until the load is settled.
