The UK average winter wheat yield is around 8 tonnes per hectare — roughly 3.2 tonnes per acre — in an ordinary year. Two warnings come attached to that number. First, the national figure swings by well over a tonne per hectare between seasons, so "average" depends a great deal on which year you ask about. Second, the average mixes first wheats on deep fen silt with third cereals on drought-prone gravel, so it says very little about what any particular field ought to be doing.
The more useful question is what separates the farms cutting 7 t/ha from the ones cutting 11 — and how much of that gap is down to decisions rather than postcode.
The average, and how far it moves

The season is the biggest single variable, and it isn't close. A wet autumn hurts twice: less winter wheat gets drilled at all, and what does go in goes in late, into poor seedbeds, and spends winter sulking. A drought in May and June clips grain fill on light land. Between a good national year and a bad one the average moves by more than 1 t/ha — a bigger swing than almost any agronomic decision on the farm.
So when someone quotes "the average", it's worth asking which season they mean. Comparing your own result against a five-year average is fair. Comparing it against one freak year, in either direction, is just picking a fight with the weather.
What separates 7 t/ha from 11

Land comes first because water comes first. A deep, moisture-retentive soil keeps the crop filling grain through June while a stony brash gives up in the first dry fortnight. No input catches that up.
Rotation position is the biggest factor you fully control. First wheats after a break crop consistently out-yield second wheats, mostly through take-all and better rooting. If the second wheat gap on your land is a tonne, that's worth around £180/ha at feed wheat prices of £180/t — a number that should sit in front of you when the rotation gets planned, and one you can only know from your own records.
Drilling date interacts with everything: early drilling into good conditions builds root and tiller; the same calendar date into a cold wet October seedbed does not. Then June sunshine either fills the grain sites the crop built, or doesn't. The years above 10 t/ha are almost always ones with a cool, bright, long grain fill.

Record crops, and what they prove
World-record wheat crops above 16 t/ha have been grown — double the UK average. Worth knowing as colour, mostly because of what those crops had in common: moisture-retentive land, a long cool grain fill, high radiation, and management with the cost sheet turned face-down.
The lesson isn't that 16 t/ha is a sensible target. It's that the genetic ceiling is nowhere near the average, and the gap is mostly water, sunshine and rooting — not a product in a can.
Measure your own before chasing the last tonne
The honest first step towards better wheat yields is knowing your current ones properly, field by field — and most farms don't, beyond a whole-farm average worked out roughly in September.
That means weighed tonnage (trailer weights, not the yield monitor's opinion), divided by the cropped area of each field, adjusted to a standard moisture. The field yield calculator does the arithmetic once you have tonnes and hectares.
A concrete example of why it matters: a farm averaging 8.5 t/ha across its wheat might be doing 10 on half the area and 7 on the rest. The average looks respectable. But the 7 t/ha fields are getting full-rate inputs for 70% of the output, and until they're identified — with figures, over more than one season — the money spent chasing "farm average plus one" is spread across fields that will respond and fields that won't.
Three seasons of honest per-field figures tells you where the next half-tonne actually lives. It's usually cheaper to find than to buy.
